This old-school catchphrase, meaning anything good and sweet, also applies to the classic cocktail made with gin, honey and lemon juice. For modern times, Bombay Sapphire’s North American Brand Ambassador Gary Hayward takes this drink up a notch by adding Dewar’s White Label to the drink’s usual staple ingredients. The result is sweet, citrusy and perfect for pairing with smoky meats or any other savory dishes.  

Hayward turns this drink into a work of art with an over-the-top garnish made of charred lemon zest. “I was inspired by the artistry of modern day cocktail creations and how we are heavily influenced by chefs,” he says. “For many years, chefs have pushed the limits of creative plating and garnishes. As the cost of craft cocktails rise, the consumers expectations for something wow comes with it.”

BEES KNEES 

1 oz. Bombay Sapphire gin

1 oz. Dewar’s White Label

0.75 oz. Honey syrup (equal parts honey and water)

0.75 oz. Fresh lemon juice

Combine ingredients in a shaker. Shake and strain into chilled coupe glass or on the rocks in a rocks glass. Garnish with a lemon twist.
